The lotus flower is one of the most ancient and deepest symbols of our planet. The lotus flower grows in muddy water and rises above the surface to bloom with remarkable beauty. Untouched by the impurity, lotus symbolizes the purity of heart and mind. The lotus flower represents long life, health, honor and good luck.

After the petals were shaded, what still stand was the seed head with lotus seeds embedded in it. At this point you can harvest the lotus seeds – to eat it, of course.

Fresh lotus seeds are sold in the seed heads of the plant and eaten by breaking the individual seeds out of cone shaped head. The soft rubbery shell that surrounds each seed should be removed before consuming.
